Apple Pie

  • 2 1/2 cups (285 g) all-purpose flour, plus extra for rolling
  • 10-ounces (1 1/4 cups, 285 g) unsalted butter (room temperature), cut into 1/2 inch cubes
  • 1 teaspoon salt
  • 2 teaspoons sugar
  • 1/2 cup (115 ml) sour cream (use full-fat sour cream for best results)


1 While the dough is chilling, peel, core and slice the apples into 1/4-inch to 1/2-inch slices. As you cut your apple slices, add them to a large bowl and sprinkle them with a little lemon juice or apple cider vinegar to help keep them from turning brown.

2 Combine sugarflour and spices (allspicenutmegcinnamon) in a bowl. Add the flour mixture to the apple slices and use your hands to distribute the flour through the apples so they are well coated. Then sprinkle with brandy and vanilla extract and stir to coat all the apples.
